I failed hard.

I’m just really excited about the progress I’ve seen this month..  It’s honestly a lot more noticeable for me in real life than it is in this photo.  I’ve actually witnessed most of my progress this past week after cutting out ~junk foods~ Since that meant eating more healthier foods, I’ve had tons more energy which means I’ve been kicking A LOT of butt at the gym.  
I’ve been making sure that my calories are in the 1800-2100 range and have been drinking at least 1 gallon of water each day.  I have more energy, my face has cleared up, no shark week cramps or irritability, no bloating, no energy crashes.
I love knowing that my body is capable of so much.  I’m so much stronger than I was in January.  I’ve put on muscle, I can curl a 30lb dumbbell, I can leg press 200lbs, I can run for 30 minutes without stopping,  I can do push ups, I’ve built up enough core strength to do flutter kicks with ease, I’ve gained endurance and speed.  I’m strong.  And y’know, I honestly never thought my body was capable of looking like this.  I’m excited to see all the progress I’m going to make over the next few months :)

 Fresh Avocado, Herb, and Citrus Salad Dressing
Ingredients:
1 ripe avocado
Juice of lime or lemon (about 1/2 cup)
1/4 cup olive oil
1 clove of garlic
Salt
Fresh ground pepper
1 cup fresh basil
Instructions:
Combine all ingredients in a food processor and process until smooth - the basil can still be in larger pieces and this is fine.
You can alter the recipe to use different types of oil, herbs, and citrus for different flavor profiles.

Sesame Noodles with Chicken
Ingredients
Kosher salt
1 pound spaghetti or Chinese egg noodles
2 tablespoons toasted sesame oil
1 garlic clove, peeled
1 (1-inch) piece peeled fresh ginger
1/2 cup smooth peanut butter
1/4 cup soy sauce
2 tablespoons dark brown sugar
1 tablespoon rice vinegar
3/4 teaspoon crushed red pepper
1/4 cup hot water
1 Kirby cucumber, halved and sliced
1 cup shredded cooked chicken
6 scallions (white and green parts), sliced
1/4 cup dry-roasted peanuts, chopped
